Feed your soul.....

Appropriately called "soul food", this tasty meat loaf is the best ever. I know there are as many recipes for meat loaf as there are for pot roasts and they all claim to be the best....but some of them really make you go "yummmm". ..and those are the ones we copy down and keep in our cherished recipe books. A whole lot of years ago, my best friend and I put our meat loaf recipes together and came up with this gem. The key little "secret" is the Marjoram spice, its what makes this recipe so special. Its a delight and I sincerely hope it will become a keeper in your recipe book. All I ask is that you think fondly of me when you're sitting at your table savoring it with your family. Enjoy, enjoy!

MEAT LOAF

Mix together:
2 lbs. ground chuck
1 chopped onion
3 eggs, beaten
3/4 cup milk
1 1/2 cups bread crumbs
1/2 tsp. ground Marjoram spice (You may substitute sage, if desired, but I prefer marjoram)
1 tsp. salt
1 tsp. pepper

Place in a 9x13 baking pan. Shape in the form of a loaf, flatten on top. Bake at 375 for 45 minutes. Remove from oven and drain off excess grease.

Mix in small bowl until smooth:
1 cup catsup
1/3 cup brown sugar
1 tsp. Worcestershire sauce OR A-1 sauce

Spread above mixture over meat loaf, return to oven for 20 more minutes at 350 degrees. Remove from oven and let set for 10-15 minutes before slicing.

This is enough for 4 hungry people plus leftovers for sandwiches later. I serve this with baked beans and a baked potato usually. I've also served this with garlic mashed potatoes, corn and cole slaw. Wow...I'm getting hungry now. Keep smilin'.

Yummy! Do you think tortilla chips would work as a bread crumb/ gluten free substitute? I have yet to find a satisfactory soy-free alternative to Worcestershire sauce. It's hard to do a good sauce--but I will continue to work at it.

Yummy...makes me crave meatloaf tonight. Nothing else is on the menu, so might as well!

Sounds wonderful. Surprisingly, meatloaf is one of my kiddos favorites, it's requested often. When they were growing up however, it was "awwww mom, not MEATLOAF".

Write me...obviously I suck and cannot find the time to write...as you know how busy I am. LOL

Meatloaf is "soul food" and "comfort foor" as well. Our favorite way to eat meatloaf is sandwiches. I'll try this one next time I make meatloaf. (I've copied it to save.) Thanks for sharing.

MMMMMmmmm,that sounds mighty tasty Val. I just made meatloaf yesterday for the Superbowl...at my son's request. Not quite the same recipe....but it was pretty good too. I'll have to try this one sometime. Thanks.

I don't really even like meatloaf, but the sandwiches, oh lordy the sandwiches the next day make it so totally worth it!

Sounds luscious! Since I cannot employ the sugar and salt of the topping, I'll just try it without--or maybe with chopped up tomatoes on top? Marjorum. Gotta try it.

I love meatloaf but never make it or eat it. I wanted to about a week ago but my daughter asked why when I knew she wouldn't eat it, so I didn't. I should make it anyway and give the leftovers to my parents. I have two other recipes that claim to be the best ever. I'll just have to make all three!

yummy! I love meatloaf and we just had it last night. The recipe I use is almost exactly the same except for the marjoram - and I'll give that a try next time.
